Monterey Sausage Pie
Instructions:
  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Crust (if using): In a mixing bowl, combine almond flour, Parmesan cheese, melted butter, egg, and salt. Mix until a dough forms. Press the mixture into the bottom and sides of a pie dish to form a crust. Bake in the preheated oven for 10 minutes, then set aside.
  3. Cook the Sausage: In a skillet over medium heat, cook the sausage until browned and crumbled. Drain any excess fat and set aside.
  4. Sauté Vegetables: In the same skillet, add the chopped onions and bell peppers. Sauté until softened, about 5 minutes. Add the chopped spinach or kale and cook until wilted.
  5. Mix the Filling: In a large bowl, whisk together the eggs, heavy cream, dried oregano, garlic powder, salt, and pepper. Stir in the cooked sausage, sautéed vegetables, and shredded Monterey Jack cheese.
  6. Assemble the Pie: Pour the filling mixture into the pre-baked crust (if using) or directly into a greased pie dish.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
  8. Cool and Serve: Allow the pie to cool for a few minutes before slicing. Serve warm.
