Ingredients:
-
2itemmedium zucchinis, grated
-
1tspsalt
-
1itemlarge egg
-
120mlshredded cheddar cheese
-
60mlalmond flour
-
2tbspchopped fresh parsley (optional)
-
1tspgarlic powder
-
1tsponion powder
-
0.25tspblack pepper
-
2tbspolive oil (for frying)
Instructions:
- Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, gather the edges, and squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters.
- In a large bowl, combine the grated zucchini, salt, egg, shredded cheddar cheese, almond flour, chopped parsley (if using), garlic powder, onion powder, and black pepper. Mix until well combined.
- Heat the olive oil in a nonstick skillet over medium heat. You want the skillet to be hot but not smoking.
- Form and Cook Fritters: Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Place it gently in the skillet. Flatten slightly with a spatula. Repeat with remaining mixture, cooking in batches if necessary.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.
- Once cooked, place the fritters on a plate lined with paper towels to drain any excess oil. Serve immediately, either plain or with a dipping sauce of your choice.
