Keto Cloud Cake
Instructions:
  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat the egg and then whisk in the milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be a little lumpy; this is normal.
  4. Let the batter rest for about 5 minutes. This allows the baking powder to activate and the batter to thicken slightly.
  5. Cook the Pancakes: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  6. For each pancake, pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
  7. Flip and cook for an additional 1-2 minutes, or until golden brown.
  8. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or a sprinkle of powdered sugar.
