Ingredients:
-
240mlallulose (or erythritol, but allulose is preferred for texture)
-
120mlunsalted butter
-
120mlheavy cream
-
1tspvanilla extract
-
0.25tspsalt (optional, for salted caramel)
Instructions:
- Melt the Butter: In a medium saucepan, melt the butter over medium heat.
- Add the Sweetener: Stir in the allulose, mixing until it has dissolved. Continue to cook, stirring occasionally, until the mixture starts to bubble and turn a light golden brown color. This should take about 4-5 minutes.
- Add the Cream: Slowly pour in the heavy cream while stirring. The mixture will bubble vigorously, so be careful.
- Simmer: Reduce the heat to medium-low and continue to cook, stirring frequently, until the caramel thickens slightly and turns a deep golden brown. This should take about 7-10 minutes.
- Add Flavorings: Remove the saucepan from the heat and stir in the vanilla extract and salt (if using). The caramel will continue to thicken as it cools.
- Cool and Store: Let the caramel cool slightly before transferring it to a glass jar or container. It can be used immediately or stored for later use.
