Ingredients:
-
480ml(480 ml) heavy cream
-
120ml(120 g) powdered erythritol or your preferred keto sweetener
-
2tbspunsalted butter
-
0.5tspvanilla extract (optional, for flavor)
-
1itema pinch of salt (optional, to balance the sweetness)
Instructions:
- Combine Ingredients: In a medium-sized, heavy-bottomed saucepan, combine the heavy cream, powdered sweetener, and butter. Stir the mixture to combine.
- Heat and Simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Reduce the heat to low, allowing the mixture to simmer gently. Stir occasionally to prevent sticking and ensure even cooking.
- Reduce the Mixture: Let the mixture simmer for about 30-40 minutes, or until it has reduced by half and thickened to a creamy consistency. It should coat the back of a spoon. Keep an eye on the mixture, especially towards the end, to avoid over-thickening or burning.
- Add Vanilla and Cool: Remove the saucepan from the heat. Stir in the vanilla extract and a pinch of salt if using. Allow the condensed milk to cool in the pan for a few minutes before transferring it to a glass jar or container.
- Store: Once cooled to room temperature, cover and refrigerate. The condensed milk will continue to thicken as it cools.
