Instructions:
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Wash the cauliflower and remove the leaves. Carefully trim the stem so that the cauliflower sits flat on the baking sheet.
  3. In a small bowl, mix together olive oil, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper to create a flavorful seasoning blend.
  4. Using a brush or your hands, coat the entire surface of the cauliflower with the seasoned olive oil mixture, making sure to get into all the nooks and crannies.
  5. In another bowl, combine grated Parmesan cheese and breadcrumbs (or almond flour for a keto-friendly option).
  6. Gently press the Parmesan breadcrumb mixture onto the surface of the cauliflower, creating a crispy crust.
  7. Place the cauliflower on the prepared baking sheet and bake in the preheated oven for 45-55 minutes, or until the cauliflower is tender and the crust is golden brown and crispy.
  8. Once baked, remove the cauliflower from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
